Apple Cider Brown Sugar Shortbread

So, its the 4th of July and I should be out at a BBQ or at the very least outside, but today, I walked 5 miles did a bit of work from home and decided to post this great cookie recipe.  The cookie recipe is as easy as American Apple Pie.

Now, as everyone knows I love cookies and I LOVE PIE! Especially Apple Pie!  So, today, I baked bread and made cookies!  Hey, I don't get a lot of days off, when you work two jobs you get one day off a week if your lucky, so staying indoors baking and cooking...well....that is heaven to me!

These cookies are really great all year round. You can definitely change up the spices, however, I do believe they are great for the fall.  I plan to make them for Thanksgiving. 

I kept this recipe in Volume since I am hoping ALL Bakers bake these for the holidays.  (I know posting early, but hey its never too early to post a great cookie recipe.)

Ingredients:

  • 1 cup Butter (room temperature)
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon Apple Pie Spice
  • 1/8 teaspoon salt
  • 2 Tablespoons of Apple Cider
  • 2 1/4 cup of All Purpose Flour

Directions:

  • Best butter till smooth.  Not very long should take less than 1 minute.
  • Beat in brown sugar, apple pie spice and salt.  Scrap down the side and add the Apple Cider and beat for a bit more.
  • Beat in flour.
  • Roll out dough to about 1/8 - 1/4 inch thick.
  • Using an Apple stamp - Stamp out the cookies.
  • Place on a 1/2 sheet pan with parchment and put in frigde overnight.
  •  

Next Day:

  • Preheat oven to 350 degrees
  • separate cookies and bake 12 to a tray for 12-15 minutes.  Flip after 6 minutes.
  • Cool cookies on rack

**I made Caramel Sauce from scratch, but you can melt down caramel candies with heavy cream.  Either way, dipping them added an amazing flavor to the cookies.  They were a huge hit at work.**
