Meat-Za - The No-Carb Pizza (All Organic and Grass Fed)

My boyfriend and I are not skinny. No. Not at all. We try to eat right, but I just love sweets and well, I work at a bakery.  However, in the past year, my boyfriend Joel has lost 40 pounds doing a low carb, low sugar diet.  I on the other hand am still struggling and have only lost about 7 pounds.  We work at it every day, but its not easy.  In fact, its down right hard.  I. LOVE. FOOD. 

Joel, loves pizza, so when he decided to try and find a no-carb pizza, well the lists were limited.  He is not a vegetable kind of guy, he is from the Midwest (Indiana).  He grew up in a household of boys. He has 3 brothers, no sisters.  So, his mom would load their vegetables up with cheese.  Being that he has relatives all over the Midwest, Joel fell in love with Cheese.  So, he knew two things, no vegetables and lots of good cheese.

Now, onto his quest, he read Non-Carb cookbooks, which he found to be just like any other recipe just substitute the bread for a whole grain.  Great idea. I love Quinoa, so I bought Quinoa and now its a staple in our home.  I mentioned the cauliflower crust, which I have often seen and read about how delicious the crust is for a pizza.  He shot back with no vegetables.  OK, our quest continued.  Joel decided that he wanted to try Paleo cooking.  Great! I love new styles of cooking.  We found some great recipes and a restaurant in New York called Hu Kitchen.  AMAZING. I created dishes, some of which you have seen in my blog, but so far nothing on pizza.  Until, one day, Joel found a recipe for a Meat-Za, where the crust is meat. Viola, we have a winner.  We experimented and experimented and finally, after eating way too much meat, Joel and I found the perfect recipe. 

Ingredients: (Please note this recipe is not in ounces or grams.)

1 Pounds of Grass Fed Beef

1/2 Cup of Almond Flour

1 Egg

1 Teaspoon Kosher Salt

1/2 Teaspoon Pepper

1 Tablespoon Italian Seasoning

1/2 teaspoon Garlic Powder

2 Tablespoons Organic Cheddar Cheese

Pizza Sauce

1/2 of Organic Sweet Onion finely chopped

1 Cup thinly sliced Organic Cremini Mushrooms

3 Cups mixture of Organic Cheddar and Mozzarella Cheese (50/50 Mixture)

5 Ounces Pepperoni

Fresh Basil

Directions:

  • Preheat 350 degrees
  • Mix together Beef, Almond Flour, Italian Seasoning, Garlic Powder, Cheddar Cheese and egg
  • Cook meat mixture for 20 minutes. The beef should be 1/2 of the way done.
  • Take meat out of oven top with Pizza Sauce, then layer with Onions, Mushrooms, Pepperoni, Basil. Do this for 2 layers.
  • Put Meat-Za in the oven for another 10 minutes.
