Aunt Helen's Ice Box Cookies
I collect antique cookbooks. I love them. I love finding antique cookbooks in small antique shops, tag sales, internet, basically anywhere I can get my hands on a cookbook older than me. (and I am in my 20's...ummm..yeah that's right 25.....a girl can dream!)
So, when my Grandmother Miriam Moskowitz died in 2004 I claimed her recipe box and her cookbooks. It wasn't till recently that I started digging through the recipes did I realize the treasure I inherited.
Cookies are such a great treat after a meal. I love them. So, I thought I would start my journey with my Aunt Helen's Ice Box Cookies. The recipe was titled Aunt Helen's Ice Box Cookies, however, it was not in her handwriting, it was actually my handwriting. I do remember going through this recipe with Grandma and her telling me it came from her sister Helen. .
Aunt Helen was the older sister of my Grandmother Miriam and her twin sister Rose. They were the Cohen sisters. They all loved to bake, but if I may be a bit biased my grandmother and her twin sister took the pie! My Grandmother watched Julia Child on PBS and collected recipes from relatives, newspapers, and anything that looked appealing. The responsibility I was given with her cookbooks and recipe box is immeasurable. So, I have started to delve into my past through food. When I started to look through Grandma's recipes I was so intrigued with the ingredients and the type of food that I continue to research cookbooks from the 30's and 40's. I am smitten.
My journey starts with Aunt Helen's Ice Box cookie recipe. I think its fitting, since she was the oldest sister.
Aunt Helen's Ice Box Cookies
Ingredients:
- 8 Ounces / 226 Grams - Unsalted Butter
- 6 1/2 Ounces / 185 Grams - Brown Sugar
- 10 1/4 Ounces / 290 Grams - AP Flour
- 1/2 tsp Salt
- 1 tsp flavoring (Vanilla, Almond Extract, Anise or whatever flavor your are craving)
So other types of flavoring / fillings:
- Sea Salt and Chocolate Chips
- Apple Cider
- Chocolate Chip and Walnut
- Hazelnuts
- Toffee
Directions:
- Measure Flour and Salt into a separate bowl. Set aside.
- Cream butter and sugar
- Add Flavoring
- Scrape down.
- Add flour and mix until just combine.
- Add fillings.
- Roll into a cylinder or flatten into a disk and refrigerate over night.
Next Day:
- Preheat oven to 325 degrees Fahrenheit
- Slice or roll and cut cookies
- Bake on cookie sheet with parchment for 12-14 minutes.
