Garden to Table Honey Mustard Green Beans
When someone says Farm to Table, I think of these massive organic farms where the farmers know their shit and professional chefs come and have their pick of what they want to cook that night. I am not that chef. I am a professional baker, but I have no creativity when it comes to Farm to Table. Or so I thought.
As many of you know, I lived in Manhattan for 11 years and before that Washington, D.C and before that both Boston and Philadelphia. Although, I grew up in the suburbs of Connecticut, I have always considered myself a city girl and still do. Growing up in Wethersfield, CT my mother grew tomatoes in the backyard, but she was into mostly plants and flowers. My sister is a horticulturalist and master gardener and works for an organic nursery in Connecticut, but she is mostly into plants and flowers as well. For me, I found my love in vegetable gardening, although, I love and appreciate plants and flowers, I find something Zen about growing your own food. Gardening has made me appreciate the suburban way of life. So, when I grew all these great vegetables and herbs in my garden this year, I thought WOW instead of Farm to Table its Garden to Table!
I am not a lover of Green Beans, but Joel's mom loves them! She grows them every year. We had a great first crop and the beans we grew were sweet and delicious and I found myself eating them raw! It wasn't till my second season crop that I started to experiment with how to prepare beans. I grew regular green beans, which I have never been a huge fan of, but I thought it’s the second season and Joel's mom loves eating them. At the end of the season I had a boat load of beans. Since I am not that thrilled with raw green beans or even steamed green beans I had to come up with a recipe that has a lot of flavor. I did it! They were delicious. So, for your Thanksgiving dinner, try serving your guests these delicious Honey Mustard Green Beans!
Ingredients:
- 1 pound / 454 grams - Green Beans
- 4 tbl / 1/4 cup / 2 oz - Apple Cider Vinegar
- 2 tbl - Honey
- 1 tbl - Ground Mustard
- 3 tbl - Extra Virgin Olive Oil
- salt and pepper to taste
Directions:
- Preheat oven to 400 F/ 200 C / gas mark 6
- In a bowl whisk together the Apple Cider Vinegar, Honey and Ground Mustard.
- While whisking, drizzle in the Extra Virgin Olive Oil.
- Add salt and pepper to taste.
- Take 3/4 of the vinaigrette and toss over the beans. Every bean should be covered with the vinaigrette.
- Spread out the beans on a sheet pan lined with parchment.
- Bake for 20 minutes and toss beans and turn pan.
- Bake for another 20 minutes.
- After the beans come out of the oven, toss the beans with the remaining vinaigrette.
