Buttermilk Spice Cake
As many of you know, I also do accounting for my brother's freight trucking business. Our dispatch is all women, which can get very interesting at times. It was my co-worker's birthday and she loves cakes and cupcakes. Throughout the week she had birthday vanilla cake and chocolate cupcakes but no other flavors. So, when asked to make Aileen some cupcakes I immediately broke out the Buttermilk Spice Cake with Brown Sugar Cinnamon Buttecream. I was so excited to bring them in for her birthday. I then brought in the cake with a Cinnamon Vanilla Glaze and everything was a hit!!
When you work in trucking your office is VERY busy. Truck drivers coming in an out of the office, customers calling and stopping by and vendors visiting the office to drop off business materials. I love it when various people come in take some of my baked goods and leave with a smile on their face. Well, this combination worked!
So here it goes:
Ingredients:
- 2 1/2 cups sifted cake flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 4 ounces of butter - soft
- 1/2 cup light brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cup buttermilk
Directions:
Preheat Oven 350 degrees
Sift together the flour, baking powder, soda, salt, cinnamon, ginger, cloves and nutmeg. Cream nbutter in a mixing bowl with both sugars. Combine eggs and vanilla and add eggs one at time. Beat till light and fluffy. Add dry ingredients alternating with buttermilk.
Pour batter into either bundt cake pan or cupcake liners.
Bake for 20 or until knife test comes out clean.
