Cheddar Cheese Popovers

I love Popovers! They are so easy to make and the only thing to really remember is 1. DO NOT OPEN THE OVEN 2. YOUR OVEN MUST BE HOT! and 3. DO NOT OPEN YOUR OVEN!  I first made popovers many years ago when I was living in Manhattan.  I just wanted something different with my dinner instead of the traditional rice or herbed potatoes. I saw a recipe in a magazine and viola, I made Popovers. 

Fast forward a few years and I was eating dinner with my friend Alice at BLT in Manhattan and they serve the most amazing Popovers! They are huge, hollow and they are served hot with a little steam coming from these big puffy things.  I fell in love with the restaurant BLT.  Actually I fell in love with their Popovers!

So, there are some nights or Sunday mornings when I want a Popover for either breakfast with some eggs or just a little butter or for dinner with some roasted herb chicken to make a little sandwhich.  Either way, I am always in the mood for some popovers.  Whether they are plan, cheddar cheese, pepper or with a little spicy kick.  Anyway you prepare them, they are always delicous.

Here is a great recipe that works every time!

1/2 cup cheddar cheese

1 cup milk

1 cup flour

1 tablespoon butter - melted

1/4 teaspoon salt

2 eggs

Preheat oven 450 degrees

Spray either a popover pan or a regular muffin pan with spray.

In a bowl mix together milk, flour, butter, shredded cheddar cheese and salt.

Beat in eggs.

Fill 3/4 ways up the pan.

Bake for 15 minutes. DO NOT OPEN OVEN and reduce heat to 350 and bake for an additional 20 minutes.
