Basil Salad Dressing
This summer, I tried for a second time to grow carrots. In March, I went to the seed store that sells heirloom seeds and bought carrots, basil, onion and spaghetti squash seeds. This was the year I was going to grow an AMAZING garden with all Heirloom vegetables! I was so psyched! It was going to be the year of the heirloom.
I started the seedlings early in small pots and when the time came I transplanted them to the garden. I waited and nothing was happening. I was getting discouraged. What happened to my carrots? So, I decided to plant more seeds. Unfortunately, I screwed up. I planted Basil. A LOT OF BASIL! Its like I grew a basil farm! What the hell am I going to do with all this basil? I decided to get creative with my recipes.
I harvested the first batch of basil, which turned out to be more than I needed so, I decided to create a vinaigrette to go with my salads. It was so delicious I keep harvesting and making this dressing! I hope you grab some fresh basil and make this dressing for your next salad.
Ingredients:
- 1 oz / 28 grams - Fresh Basil
- 1/2 tsp- Salt
- 1/4 tsp - Pepper
- 6 oz - Apple Cider Vinegar
- 2 oz - Extra Virgin Olive Oil
- 1/2 tsp - Lemon Juice
- 3 Tablespoons - Honey
- 1/2 tsp - Ground Mustard
Directions:
- In a food processor add basil, salt and pepper.
- Pulse a few times just till the basil is broken up.
- In a measure cup, or any container, combine apple cider vinegar, extra virgin olive oil, honey and ground mustard.
- Whisk mixture together.
- Slowly pour the apple cider vinegar mixture into the basil, salt and pepper while the food processor is running.
- Run the food processor till smooth.
- DELICIOUS over a salad or in chicken salad!!
